Fluffy juice is the latest cocktail craze — and…

A growing quantity of bars are embracing a approach that transforms contemporary fruit juice into a mild, frothy part recognized as “fluffy juice.”

Unlike conventional cocktail foam made with egg whites, cream or carbonation, fluffy juice depends on aeration.

By whipping or quickly spinning contemporary citrus juice, bartenders introduce air into the liquid, creating a thicker texture without including extra ingredients.

The approach is widely credited to Dante, a New York City bar that popularized the strategy with its model of the Garibaldi, a basic Italian cocktail made with orange juice and Campari, according to VinePair, a beverage-focused publication.

“We saw it as an opportunity to be a daytime cocktail, or the reason that people would come during the day for a low-in-alcohol, bright, and fresh drink,” Linden Pride, co-owner of the Greenwich Village aperitivo bar Dante, told VinePair.

Since then, other bars have begun incorporating whipped citrus into their menus, making use of the same methodology to grapefruit, pineapple and lime in up to date takes on basic cocktails, the publication said.

Interest in the approach has moved past cocktail bars, with home drinkers attempting to recreate the ethereal texture themselves.

On social media, customers have shared videos displaying how they whip contemporary orange juice utilizing milk frothers or high-speed blenders to mimic the bar model.

The drink’s simplicity, requiring only orange juice and Campari, has made it accessible for experimentation at home.

In a Reddit post, a consumer described the drink as “the best two-ingredient drink in the world,” while another wrote, “Move over, mimosa!”

The approach doesn’t alter the ingredients themselves but adjustments how they’re perceived, offering a new texture without including dairy or egg whites.

Not all fruits maintain the ethereal texture equally. Citrus and pineapple juices have a tendency to produce the most steady foam, Pride said.

Over time, the fluffy Garibaldi grew to become one of Dante’s defining choices.

“It became the symbol of Caffe Dante, what we wanted Caffe Dante to become. But I never expected it to reverberate around the world in the way it has,” Pride said.
